Saving Tomato Seeds: The Fermentation Method

Every ripe tomato on your counter is holding a hundred-odd seeds and asking a question: why are you buying this variety again next year? Saving tomato seed is the easiest serious seed-saving there is — tomatoes are self-pollinating, so the seed comes true without any isolation fuss — and the fermentation method that does it right takes five minutes of work and three days of waiting. The catch isn't the process. It's knowing which plants are worth saving from in the first place.

Open-pollinated saves true; hybrids don't

Here's the honesty that has to come first. Seed saving only works as advertised with open-pollinated varieties — the heirlooms and stable standards whose offspring look like their parents. A hybrid (marked F1 on the packet or plant tag) is a deliberate cross between two parent lines, and its seeds don't reproduce it. Save seed from an F1 and you'll get tomatoes, but a genetic grab-bag of them: some like the hybrid, some like each grandparent, most somewhere in between.

That's not the same as saying hybrid seed is sterile or dangerous — it isn't, and growing out F1 offspring is actually how some gardeners breed their own varieties, selecting the best plants over several seasons. But if the goal is "this exact tomato again next year," check before you ferment. If the variety name rings vague, the seed packet or the supplier's page will say; heirlooms like Brandywine and Cherokee Purple are open-pollinated, while most supermarket-adjacent slicers and many disease-resistant garden centers staples are F1s. One more honest note: even open-pollinated tomatoes cross occasionally, since bees do visit the flowers. For home purposes the risk is small — a few percent, higher for potato-leaf types and doubled flowers — and most gardeners ignore it. If you're maintaining a rare variety, save from plants in the middle of a block of the same variety rather than one growing beside a different tomato.

Pick the fruit that earns the privilege

Save seed from your best whole plant, not your prettiest single fruit. A gorgeous tomato on a blight-wrecked plant passes along the plant, not the fruit. Walk the row in late summer and choose the plant that stayed healthiest through whatever your season threw at it — the one that shrugged off the leaf spots and kept setting fruit in the heat wave. Then take fully, even slightly over-ripe fruit from that plant; seeds keep maturing as the fruit ripens, and a dead-ripe tomato carries the most vigorous ones. The fermentation method, step by step

Tomato seeds come wrapped in a gel sac that inhibits germination (so seeds don't sprout inside the wet fruit). Fermentation dissolves the gel, and as a bonus can reduce some seedborne disease on the seed coat. It smells exactly as advertised. Do it anyway — unfermented seed stores worse and germinates unevenly.

  1. Squeeze the seed cavity contents into a jar — seeds, gel, juice and all. Add a splash of water if the pulp is thick. Label the jar immediately; fermenting slurry is anonymous.
  2. Cover loosely and leave it at room temperature for two to three days. A paper towel over the mouth keeps fruit flies out. Stir once a day.
  3. Watch for the finish line: a film of white mold on the surface and seeds dropping to the bottom. That's the gel broken down. Two days in a warm kitchen, three in a cool one. Don't run long past this point — seeds left a week in the ferment can start germinating in the jar, which ruins them for storage.
  4. Pour off the mold, pulp, and floaters. Add water, swirl, and decant the debris; repeat until the water runs clear. Good seeds sink; almost everything that floats is pulp or a dud.
  5. Dry on a labeled ceramic plate or coffee filter — not paper towel, which becomes a permanent attachment. Spread the seeds in a single layer, break up clumps with a fingertip on day one, and give them one to two weeks somewhere airy and out of direct sun. Never use heat: an oven, a dehydrator's warm setting, or a sunny windowsill can cook the embryo.

A seed is dry enough when it snaps rather than bends and slides off the plate freely. Rushing this step is the main way home-saved seed dies in storage — moisture, not time, is what kills it.

Why not just squeeze and dry?

You'll meet gardeners who skip fermentation — smear seeds on a plate, let them dry, done — and their seeds do usually sprout, so it's fair to ask why bother with the smellier method. Three reasons. First, unfermented seed keeps its gel coat, which dries into a glue: seeds cement into clumps and to the plate, and the intact coat can make germination slower and patchier next spring. Second, the ferment plus the float-rinse is a quality filter, washing out immature and hollow seeds that the smear method dries right alongside the good ones. Third, the ferment gives some cleaning action against seedborne disease riding on the seed coat — not a guarantee, but meaningful for a crop with as many foliage diseases as tomatoes. For a couple of cherry tomatoes' worth of backup seed, smear away. For seed you'll rely on, plant in quantity, or share, ferment.

Scale is worth a sentence too: one large tomato yields 50 to 150 seeds, so two or three fruits per variety covers a family garden for years with plenty to trade. Ferment each variety in its own labeled jar rather than pooling — the jars take no more time, and unmixed seed is the entire value of the exercise.

Storage: cool, dry, dark, labeled

Dried tomato seed asks for the same things as any seed, only it rewards you longer for providing them. Cool, dry, and dark, in that order of importance. Paper envelopes inside an airtight jar is the classic setup, ideally with a desiccant packet or a tablespoon of dry rice in the jar bottom. A closet shelf works; the refrigerator is better if the jar is genuinely airtight (let it warm to room temperature before opening, or condensation undoes your careful drying).

Label with variety and year, always. Well-dried, well-stored tomato seed stays strongly viable for several years and often far longer — old seed loses vigor gradually rather than dying overnight.
