Thyme is the low, wiry, drought-proof workhorse of the herb garden: a tough little perennial that asks for sun and sharp drainage and then quietly thrives for years. It's one of the easiest herbs to keep alive, spreads into a fragrant mat that doubles as edging or a path-side groundcover, and shrugs off the heat and neglect that finish softer plants.

Like rosemary and the other Mediterranean herbs, thyme wants full sun, lean soil, and to dry out between waterings. Soggy ground is its one real enemy (wet roots rot, especially over winter), so give it gritty, free-draining soil and water sparingly once established. It's a natural for the hot, fast-draining edge of a raised bed, a container, or the cracks of a stone path, anywhere richer plants would struggle. Don't bother feeding it; lean conditions concentrate the oils that give thyme its flavor.

Thyme's one maintenance need is a yearly trim. Left alone it gets woody and bare in the center over time, with the live growth pushed out to the edges. Don't cut back hard into the old bare wood, though — like rosemary, thyme is reluctant to releaf from leafless woody stems, so always leave some green growth on each branch.

Snip sprigs whenever you need them; regular light harvesting only keeps the plant tidy. Flavor is strongest just before it flowers, but don't rush to stop the bloom — thyme's small flowers are a magnet for bees and other beneficial insects, making it a genuinely useful companion plant tucked among the vegetables. The leaves are small enough to strip from the stem after harvest, or just drop a whole sprig into the pot and pull the bare stem out before serving.
